Duties:
Job Duties:
- Supervise kitchen staff.
- Plan work schedule so that food production flows smoothly.
- Develop and follow standardized recipes, and use portion control methods, including the weighing/measuring of meal components. Prepare menus that meet the requirement of the Head Start, ISBE and USDA food program.
- Ensure that special diets as determined by student medical documentation and are adhered to.
- Ensure that meals are prepared on schedule.
- Use appropriate guidelines for estimating amounts to be prepared, utilizing leftovers for subsequent child meals wherever possible and ensuring that extra food or leftovers are distributed or disposed of per policy.
- Use food production and food storage procedures that are in compliance with the Cook County Health Department.
- Perform weekly food inventory and place order to vendors for items needed.
- Plan and complete routine cleaning and maintenance of kitchen and equipment.
- Wash and sanitize utensils and dishes thoroughly, assist with classroom cleanup.
- Maintain proper hygiene and dress requirements for food service staff.
- Assist with supervision of kitchen staff.
- Help to integrate the kitchen into CFS programs by participating in nutrition education activities.
- Responsible for monitoring classrooms to ensure meals are being serviced properly.
- Responsible that monthly meal claims reported to ISBE.
- Responsible for ensuring all documentation is in order for audits. Work with staff and director in preparation of all audits.
- Maintain a cooperative working relationship with Head Start staff and parents.
- Communicate and problem solve with Director of CFS and Health/Nutrition Consultant.
- Attend trainings and meetings as requested.
- Perform other duties as requested by supervisor.
Qualifications:
Qualifications
- Three to five years previous experience and background in food service working with children 0-12 in a large organization.
Supervising kitchen staff - Excellent Knowledge of the USDA, ISBE, Head Start and other state, local agency guidelines.
- High School Diploma or GED, Degree or related certifications in food services.
- Valid Illinois Driver's License with a good driving record and access to a reliable vehicle
- Must be vaccinated for COVID-19 per Head Start/PLCCA mandate or qualify for an exemption waiver
Knowledge/Skills/Experience Required
- Excellent computer skills (Microsoft Office applications is a must)
- Previous experience in a large-scale food production operation.
- Ability to work independently.
- Knowledge of quantity food preparation, equipment, and food purchasing.
- Current State Food Certification
- Background Check
- Enrollment in Child Care Division-Central Background Registry at time of hire.
- Health Questionnaire required post hire.
- Reliable transportation, current Illinois Driver’s License and proof of insurance.
- If driving an agency vehicle is required a DMV check will be performed at time of hire and annually, and Drug/Alcohol Screening will be done post hire.
Instructions:
Salary Range - $45,000 to $50,000 based on experience
