2 tortillas, made with either corn flour or wheat flour
½ cup fat-free refried beans (optional)
1 cup low-fat shredded cheese
- Put one tortilla on a large microwave-safe plate. Spread a layer of refried beans on the tortilla, and sprinkle shredded cheese over the beans. If the beans are not included, then sprinkle the cheese on the tortilla.
- Put the second tortilla on top of the cheese layer.
- Cook in the microwave until the cheese is melted, about 30 seconds to 1 minute. Before serving, check to make sure that the cheese is not too hot.
- Cut quesadilla crosswise into pizza-shaped slices.
Makes 8 to 10 servings
Safety tip: To prevent injuries, an adult should slice ingredients and supervise use of the microwave.
