15-ounce can black beans
2 cups frozen corn kernels, thawed
1 red pepper, chopped
2–3 tablespoons red onion, finely chopped
¼ teaspoon garlic, finely chopped
3 tablespoons olive oil
2 tablespoons lemon juice
¼ teaspoon salt
¼ teaspoon ground pepper
2 tablespoons cilantro, finely chopped
1⁄8 teaspoon chili powder
- Put the black beans, corn, red pepper, red onion, and garlic in a large bowl.
- Put the olive oil and lemon juice in a small bowl and mix well with a fork or whisk.
- Pour over the black beans, corn, red pepper, red onion, and garlic mixture.
- Season with salt and pepper. Add the cilantro and the chili powder.
- Mix well.
Makes 10 to 12 servings
