Gazpacho.1 15½-ounce can chopped tomatoes

1 cup tomato juice

small cucumber, chopped

½ onion, finely chopped

¼ teaspoon garlic powder

1 tablespoon vinegar

¼ to ½ teaspoon hot sauce (optional)

¼ teaspoon salt

¼ teaspoon pepper


  1. Mix the chopped tomatoes, tomato juice, cucumbers, onions, garlic, vinegar, hot sauce, salt, and pepper in a large mixing bowl.
  2. Cover and chill for 1 to 2 hours before serving.

Makes 6 to 8 servings
